If you haven't modified the minecraft_server.jar and aren't using a mod which replaces this (e.g. Craftbukkit) follow the steps below:-
1. Download the latest version from the bottom of this page http://www.minecraft.net/download.jsp (click where it says minecraft_server.jar)
2. Upload it to your minecraft server overwriting the existing version (stop the server before uploading the new version)
If you are using Craftbukkit or other mod which replaces the minecraft_server.jar then you will have to wait until they release a new version and so you are advised not to update your minecraft client on your computer until they have released the update.
NOTE: We don't generally force out minecraft updates because the minecraft_server.jar can be customised so forcing the update would lose any changes.
